Extending the shelf life of fresh fruit by developing natural, fully edible coatings that protect them from both spoilage factors to enable fruit that is currently shipped by air due to its short shelf life to be shipped by sea without loss of quality, thereby reducing transportation costs by 80% and greenhouse gas emissions by more than 45 times per kilogram-kilometer, according to MIT estimates.
